I found a treasure trove of recipes, which were developed by a lady named Gloria Pitzer, I have no idea, who she is, but when I got my hands on the recipe book, obviously from the 50's, I freaked out. This publication has recipes from places like Woolworth's Sears, and Hudson's Cafeteria, and many, many, more. I figured that the Zaar would be the place to preserve them.   The recipe came from a family friend, Val Gerber, who I believe had won at the Brisbane Show and the recipe was printed on the back of the Fielder’s Cornflour as “Val’s Sponge”. I remember meeting Val when I was a little girl out on the farm.

Hastily I rummaged through my grandma’s recipe book to find a cake that I already had the ingredients for and that could be ready in a more congenial time. I found a sponge cake recipe that gave me hope. I remember my grandma rocking sponge cakes, slicing them in half and sandwiching them together again with lashing of strawberry jam and cream.   This classic sponge cake recipe is by Margaret Fulton, from The Great Australian Cookbook.
